This is a recipe that was given to me when I was in Asia in the 80s..... It has been my favorite, as it is really moist.

3 cups AP Flour
2 tsps Baking Soda
2 tsps Ground Cinnamon
1/2 tsp Salt
Sift the above ingredients & set aside.  Preheat the oven to 325 degF.
Grease & 2 8" pans & line the bottom with parchment paper.
3 Eggs
2 Cups Caster Sugar
1 1/2 Cup Vegetable Oil
2 tsps Vanilla Extract
until it is light & creamy.

Then ADD TO THE flour & mix gently :
2 Cups finely grated carrots
1/2  Cup Chopped Pecans
1/2 Cup Raisins
Add in:
1 small can crushed Pineapple, drained & mix.

Add in the flour mixture to the creamed mixture & pour the batter into the prepared pans.
Bake  for about 45 mins or until a skewer inserted into the cake comes out clean.



6 cups sifted cake flour ( see tips & tricks)
2 Tablespoons baking powder
1 1/2 cups butter

3 cups sugar
2 cups milk
1 teaspoon  Vanilla Extract
12 egg whites


Preheat oven to 325°F. Grease bottom of pans and line with  parchment paper. Sift together flour and baking powder. Meanwhile, cream butter and sugar together until light and fluffy. Set aside.

With a mixer at slow speed, add flour mixture to butter mixture, alternately with milk. Beat well after each addition. Beat in vanilla extract. Beat egg whites until stiff, but not dry. Gently fold egg whites into batter. Pour into prepared pans. Bake until skewer inserted into center comes out clean.

You can add any flavouring to this, instead of Vanilla to make other flavoured cakes.





3 cups sifted cake flour (see tips & tricks)
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 3/4 cups sugar
2/3 cup butter or margarine
2 eggs
1 1/2 teaspoons vanilla
1 1/4 cups milk


Preheat oven to 350°F.

Grease bottom of two 8-inch round cake pans and line with parchment paper.

Sift together flour, baking powder and salt & set aside.

Cream sugar and butter together until light. Add eggs and vanilla to creamed mixture and beat until thoroughly mixed.

Add flour mixture to creamed mixture alternately with milk, beating well after each addition.

Beat well & divide batter in prepared pans.

Bake  35 minutes or until wooden skewer inserted in center comes out clean. Cool layers in pans on wire racks 10 minutes. Remove from pans & cool completely.


(Excellent for wedding cakes)


1 box cake mix

1 envelope dry dream whip

1 small box pudding (3 oz cook & serve)

4 eggs

1 cup water or milk

2 tabsp oil


Mix all of the above ingredients on #4 speed for about 1 1/2 to 2 mins.

Pour into required pans & bake for required time for individual pans.
